Is Marsh Samphire edible?
Marsh Samphire is edible raw, fermented or pickled. One traditional way to eat it is to hold it by the root and remove the flesh from the stem with your teeth. The juicy flesh has a salty taste, with a hint of the iodine you get with seaweed. According to tradition it should not be harvested before the summer solstice, but is edible during the growing cycle. It is found above ground from the start of the spring warm-up until cooler weather returns in late September. The length of that season will be determined by regional variation and temperature. Picking is the traditional way to preserve this plant, which offsets the natural saltiness and makes it useful as an addition to fish dishes all year round. I treat it a bit like mini salted asparagus and boil (or steam) and then serve with melted butter or a suitable oil.
